Cherry tomatoes, mozzarella and basil pasta

What pasta dish could represent the italian flag better than cherry tomatoes, mozzarella and basil pasta? Red, white and green in this colorful dish that won’t disappoint you with its flavours and taste: tomatoes, mozzarella, and basil together are a wonderful trio, and this recipe it’s not only delicious but pretty easy to make as well, which is always a good thing. Summer is the perfect season for cherry tomatoes and basil, and the flavour of this yummy sauce is enhanced by ingredients like garlic and obviously olive oil, which plays an essential role in this lught but tasty dish. With some genuine olive oil, fresh basil, bright red tomatoes and melted mozzarella, the result it’s going to be amazing and you will surely love cherry tomatoes, mozzarella and basil pasta!

INGREDIENTSPasta with Cherry Tomatoes and Fresh Mozarella
1 pound pasta (spaghetti or else)
3 tablespoons olive oil
3 cloves garlic, slivered
2 pint red cherry tomatoes
1¾ teaspoons salt
1 tablespoon salt
¼ cup spaghetti cooking liquid
7 ounces cherry size fresh mozzarella balls, halved
½ cup fresh basil, chopped

DIRECTIONS
To prepare an awesome cherry tomatoes, mozzarella and basil pasta, put a large pot of water on the heat, then start preparingcherry tomatoes mozzarella and basil pasta 2 your sauce. Cut the garlic cloves in half and the cherry tomatoes, then put them in a bowl and leave them there for about 10 minutes. Take a large saucepan and heat 2 tablespoons olive oil, then add the sliced garlic, the cherry tomatoes and a bit of salt and set on medium heat, cooking for about 10-12 minutes stirring every now and then until the tomatoes have softened.

The moment you add the tomatoes to the saucepan it’s when you need to start cooking the pasta. Add 1 tablespoon of salt to the boiling water and then add the pasta; once the pasta is ready, strain it and put it in the saucepan together with the tomatoes sauce, then add a couple spoons of olive oil, stirring for 30 seconds. Last, add the diced mozzarella and stir for less then a minute, until the mozzarella starts melting a little bit. Serve immediately the cherry tomatoes, mozzarella and basil pasta, adding some chopped basil on top of it.
