Chicken in balsamic barbecue sauce

This simple South African, ultra-tasty dish is usually done on a barbecue and mixes wonderfully with the smoky flavours. Chicken in balsamic barbecue sauce also makes a great healthy winter-warmer when cooked under a grill indoors for those of us not so lucky to live in a hot country! Serve chicken in balsamic barbecue sauce with boiled potatoes and steamed veggies for a healthy family meal that everyone will love. Perfect for when you’re short on time, simply pop the chicken in to marinade in the morning and it can be on the table in under half an hour in the evening. Chicken in balsamic barbecue sauce will be surely appreciated by your guests, there’s no chance they won’t like it, especially with some crispy onion rings on the side!

8 chicken breasts
1 small onion, finely chopped
1/4 cup olive oil
3/4 cup balsamic vinegar
3 tablespoons sugar
6 tablespoons ketchup
2 tablespoons Worcestershire sauce
4 green onions, chopped
1 chicken bouillon cube, crushed
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dry mustard
3 garlic cloves, finely chopped

DIRECTIONS
Combine all ingredients except chicken. Marinate chicken in half the sauce for 3 hours or overnight. Put remaining marinade aside.

Remove chicken from marinade, place chicken in foil-lined pan and broil until nicely browned about 10- 20 minutes per side (depending on the size), or grill on the bbq. Heat reserved marinade and pour over chicken. Serve chicken in balsamic barbecue sauce and… enjoy!
