We love creamy pasta: me, my brother, my girlfriend, my parents, we just love creamy pasta recipes. Even better if they are not greasy or heavy, not much anyway. What’s not to love?! Shrimp, bacon and cream cheese all in one dish? Philadelphia, shrimp and bacon pasta is easy to make, very quick, tasty, quite light (consider using only Philadelphia and shrimp, leaving the bacon out of the recipe) and colorful. I first tried this recipe a few years ago and then I almost forgot about it, until the other week, when my friend Davide and his wife Erika came round for dinner. I really did not know what to cook, but since I had some Philadelphia, I suddenly rememeber about this dish, and I made it straight away. The result was awesome (it’s a very easy recipe so no wonder) and they asked for more, so I couldn’t be any happier.
500 grams spaghetti
1 1/2 cups pasta water
1 cup milk
150 grams cream cheese, diced, at room temperature
200 grams shelled shrimp
6 rasher of bacon, cut
1/2 of a medium onion, finely chopped
2 cloves of garlic, finely minced
1 tsp chicken powder
1 tsp chili flakes
1 tsp brown sugar
Some ground black pepper
A handful of cilantro, coarsely chopped
Some grated cheese
Boil pasta according to the package direction. Reserve 1 1/2 cups pasta water. In a wok or a large pan, heat some oil then add in the onion; pan-fry until softens then add in the garlic; fry until garlic turns lightly brown. Add the bacon, shrimp, some of the chili flakes and a dash of ground black pepper, stir fry until shrimp turns pink or light orange ?!), transfer in a plate, keep warm.
In the same pan, with heat turn low, pour in the pasta water, milk and cream cheese, stir with a whisk and blend until smooth and add the chicken powder, the remaining chili flakes, sugar and a dash of black pepper. Let the mixture boil and adjust seasoning; let simmer over low heat for about 5 minutes, stirring from time to time. Add in the bacon and shrimp mixture, stir and add in the pasta; mix well to combine, add in the cilantro, give it another good stir. Dish up and serve Philadelphia, shrimp and bacon pasta hot, with a sprinkle of grated cheese and some chopped cilantro on top.
