A colorful combination of vegetables, tender pork strips (or chops), flavorful seasonings and crunchy peanuts makes pork and vegetables stir-fry appealing even to kids. Served over rice, this dish it’s a fresh-tasting complete meal that gives you the right amount of protein and vitamins. Pork plays a major role in many Asian cuisines, where it is prepared in seemingly endless ways: pork and vegetables stir-fry is very easy to make even though you will need loads of vegetables, the ones you prefer. The good thing about stir-fries is that you don’t need a lot of fancy ingredients to have a perfectly presentable dish. All you need is a pan and a cooking oil that can take high heat. Woks work well for this, as do large pans of cast iron or hard anodized aluminum. If you like spicy food, you could easily add some chilli or tabasco to your pork and vegetables stir-fry.
2 tablespoons dry sherry
1 tablespoon salt-reduced soy sauce
2 teaspoons honey
500g. pork fillet, thinly sliced
1 large red onion, cut into thin wedges
2 garlic cloves, crushed
1 teaspoon freshly ground black pepper
2 large celery sticks, thinly sliced
300g broccoli, trimmed, cut into small florets
1 red capsicum, cut into strips
2 tablespoons water
1/2 cup fresh basil leaves
2 cups steamed brown rice, to serve

So let’s see how to properly prepare the pork and vegetables stir-fry. Combine the sherry, soy sauce and honey in a small bowl. Stir until combined, teat a large non-stick wok over high heat and spray with oil. Add the pork and stir-fry, in 2-3 batches, for 1-2 minutes or until golden. Transfer to a plate. Heat wok over high heat and spray with oil. Add the onion and stir-fry for 2 minutes or until golden, then also add garlic and pepper. Stir-fry for 30 seconds or until aromatic.
Add celery, broccoli, capsicum and water. Stir-fry for about 2 minutes. Add the pork, sauce and any resting juices. Stir-fry for 1-2 minutes or until combined and heated through. Stir in the basil leaves too and serve with steamed brown rice. Sprinkle with the extra basil leaves: pork and vegetables stir-fry is done and ready to be enjoyed.
