I love when I plan to make some simple grilled chicken breasts, but somehow the day gets away from me and I never get them marinated. Dry, flavorless grilled chicken breasts, no thank you! I’d rather just scrap the whole deal and have some cereal. But wait… (sounds like an infomercial!) with these smoky chicken skewers you too can have tasty last minute chicken! …and if you make them right now, you can have a recipe for a really easy 5-ingredient sauce to go with them! Ha! Seriously though, these spice rubbed smoky chicken skewers cook in about 10 minutes on the grill (in the broiler or on the stove) and the sauce is 5-ingredients stirred together! Whew, at least something is easy! I usually serve these smoky chicken skewers with cilantro rice, just in case you want to try that as well. You might also try them dipped in yogurt sauce. I’m quite sure you’ll love them!
6 boneless, skinless chicken thighs (about 500g/1lb 2oz)
2 tbsp olive oil
1 tsp fennel seed, crushed
1 tsp ground cumin
1 tsp sweet smoked paprika (pimenton)
1 garlic clove, crushed
1 tsp red wine vinegar
Smoky aïoli, to serve
You need 15 skewers: if wooden, soak in water for 10 mins. Cut chicken into 3cm pieces and place in a bowl. Add 1 tbsp olive oil, the spices, garlic and vinegar, toss well and season. You can do this up to a day before and refrigerate.
Thread 2-3 pieces on each skewer. Pour remaining oil in a frying pan or rub onto a griddle pan. Get the pan hot and sear the chicken for 3-4 mins on each side – you may have to do this in batches, keeping the cooked skewers warm in a low oven.
Serve smoky chicken skewers with aïoli or yogurt sauce, if you like.
