Cucumber and avocado salad

Spring and summer are perfect to grow your own vegetables, or to go to the market and have a wide choice of veggies and herbs like fresh tomatoes, cucumbers, basil and much more. Cucumber and avocado salad is the perfect way to combine some of these ingredients in a healthy and tasty way, and this fresh and flavorful recipe will probably be your new favorite summer dish. It has low calories (about 200-250) but it also offers fiber, about 5 grams, and protein, 10 grams, so beside being delicious it’s also really good for the body. Cucumber and avocado salad only takes 5 minutes to make and you only need a few basics ingredients, easy to find in stores. You can make this salad with your eyes closed, it is that easy. Still, if you invited someone for lunch, this salad won’t leave your guests disappointed.

INGREDIENTScucumber and avocado salad
2 medium cucumbers, cubed
2 avocados, cubed
4 tablespoons chopped fresh cilantro
1 clove garlic, minced
1/2 red onion, chopped (optional)
1/4 teaspoon salt
Black pepper, to taste
1/4 large lemon
1 lime

DIRECTIONS
In a large bowl, combine cubed cucumbers, avocados, and chopped cilantro. Stir in garlic, onions (optional, I do love some red onion but you can skip this step if you prefer), salt, and pepper. Squeeze lemon and lime over the top, and toss. Cover, and refrigerate at least 30 minutes: your cucumber and avocado salad is already done!
