Sun-dried tomato pesto

Pestos are really easy to make and I always enjoy playing around with different flavours. One of my favorite pestos is this sun-dried tomato pesto which is almost as easy to make as throwing everything into a food processor and pureeing. In addition to being super simple to make this pesto is just packed with flavour! I like using pestos like this in pasta (have a look at the photo gallery) or as a condiment in sandwiches. Sweet and savory, rich with deep undertones, yet still mild and smooth: sun-dried tomato pesto is just lovely. I always loved tomatoes, but there is something extra special about the sun-dried variety. This colorful pesto is also great on crostini, as a dip for veggies, or on a sandwich – all the usual suspects, really.

INGREDIENTSSun dried tomato pesto
12-14 sundried tomatoes in olive oil or about ¼ cup
2-3 garlic cloves
Handful of pine nuts, toasted
Salt, to taste
Olive oil

DIRECTIONS
In a small skillet, toast the pine nuts on low heat until they get some color. Watch them carefully so they don’t burn. Let cool a bit before adding them to the food processor. In a food processor, add in your sundried tomatoes, garlic cloves, pine nuts, and salt.

Put the lid of the food processor on and pulse the food processor while drizzling the oil until the mixture comes together. Taste it and see if it needs anything more. If not, give it one last nice long pulse and store it in an airtight container in the fridge. Serve sun-dried tomato pesto at room temperature.
